Our unique organic coffee specialties are made exclusively from 100% high-quality Arabica beans from certified organic cultivation in the Peruvian highlands—the finest and most popular coffee variety in the world.
These Arabica beans are characterized by their mild flavor, delicate acidity, and a rich aroma spectrum ranging from fruity and floral to nutty and chocolatey. They thrive under ideal climatic conditions at altitudes of 1,000 meters and above sea level on the fertile slopes of the Peruvian Andes.

Our organic Arabica coffee beans are cultivated with care and passion on small plantations in the Peruvian Andes, using traditional techniques from small-scale farming families and communities.
The conditions in this region are ideal for growing the delicate Arabica plant: the high altitude, temperate climate, and mineral-rich soil give our Arabica beans a unique character that unfolds in the cup. We are particularly proud of our "Plantation" or "Plantación" product line, where the beans are grown and sourced exclusively in advanced agroforestry systems.
Here, Arabica plants thrive in harmony with trees and other crops, promoting biodiversity, improving soil quality, and supporting forest development.
Our organic Arabica coffee cherries are carefully picked by hand, selecting only the red, ripe cherries that are crucial to the unique organic quality of our coffee. In addition to improving quality, this technique ensures less stress and strain on the delicate Arabica coffee plant.
At a time when many conventional producers are relying on mechanical harvesting methods and more robust coffee plants such as the Robusta coffee plant due to the increasing global demand for coffee, often prioritizing quantity over quality, we consciously rely on the traditional hand-picking method.
This means that for our ALTOMAYO organic coffee specialties, we can guarantee that only red-ripened Arabica coffee cherries from controlled organic cultivation make their way into the cup for the best organic coffee experience, taking the senses on a journey to Peru.
The aim of the processing is to completely expose our Arabica coffee beans – the core of the red-ripened coffee cherries – in order to prepare them for transport in further steps.
For our organic coffee specialties, we rely exclusively on the so-called "washed process." This involves first pulping the ripe coffee cherries using a partially manual system, as shown in the picture. This means that the kernel, or beans, of the coffee cherry are separated from the surrounding pulp. The residue is then removed by thorough washing with water.
Finally, the cleaned green coffee beans are spread out and dried naturally using solar energy. Drying occurs with regular turning until the optimal moisture content is reached for further transport.
The processing processes are not only necessary to preserve the beans, but also have a major influence on the final taste of high-quality organic coffees.
Each method involves some form of fermentation, which affects the flavor. Washed coffees are often described as vibrant, complex, and clear with a milder body. This method highlights the pure flavor of the coffee bean, reflecting the characteristics of the growing region, variety, and varietal.
The taste of the coffee cherry fades into the background, so that the pure character of the bean takes center stage.

Before the dried organic green coffee beans become the fragrant coffee you've come to expect, they must be roasted to develop their characteristic color and full aroma. Roasting is crucial for the taste in your cup:
To refine our organic coffee specialties, we use a particularly gentle, long-term drum roasting process, which allows us to positively influence the aroma development and ultimately the taste, while also reducing unwanted irritants and bitterness. We ensure that the special aromas that define the character of our Peruvian coffee develop optimally. Some of our organic Arabica beans are decaffeinated using a special CO² process before roasting to preserve the authentic aromas and natural flavor of the coffee and ensure uncompromising enjoyment.
Our decaffeinated organic coffee specialties are produced using a particularly gentle CO₂ process—the most natural and highest-quality method of decaffeination.
At the beginning of the process, the raw, unroasted coffee beans are moistened with steam and water in a large tank. After a brief exposure time, the chamber is pressurized and flowed with liquid or gaseous carbon dioxide (CO²). This gently extracts the caffeine from the beans. This process is repeated until the lowest possible caffeine content of less than 0.1% is achieved. The CO₂ process has the advantage that no chemicals are used and virtually no CO₂ residue remains on the beans. Furthermore, the coffee's valuable aromas are largely preserved.
The result? A coffee that retains its full flavor and subtle aromatic nuances and is virtually caffeine-free.

Our Peruvian organic green coffee beans undergo a careful processing and roasting process that brings out their unique flavors.
In a traditional drum roaster, the beans are gently roasted at temperatures between 180 and 214 °C. This slow roasting of over 10 minutes allows the beans to fully develop their complex flavor profile and removes unwanted irritants and bitterness. Our gentle roasting process ensures that the natural fruit acids that define the character of our Peruvian coffee are preserved.
The result is a harmonious interplay of floral and fruity notes, rounded off by a delicate sweetness and light nut and chocolate aromas.

After processing, our organic coffee beans are gently processed and carefully packaged to preserve their freshness. They are then transported by sea from Peru to Europe, where our coffee is further processed in certified roasteries.

Our decaffeinated ALTOMAYO organic coffee is produced using a particularly gentle and sustainable process – the CO₂ decaffeination process. This process not only preserves the precious aromas but is also environmentally friendly.
